I was a little worried the black bean chili with rice recipe called for no liquids, but it turned out great! Thick and tender, with great taste.

Ingredients
1 Pound Lean Ground Beef, Twice Grounded
2 1/2-3 Cups Cooked Black Beans
2 Green Peppers, Diced
1 Large Onion, Chopped
3 Large Carrots, Peeled, Sliced
2 Teaspoon Chili Powder
3 Garlic Cloves, Minced
1 Bay Leave
1 Teaspoon Red Pepper Flakes
3 Cups Tomato juice
3 1/2-4 Cups Cooked Rice or 1 1/2 Cups Uncooked Rice
Sour Cream [Optional]
Shredded Cheese [Optional]
Salsa [Optional]
Chips [Optional]
Directions for Black Bean Chili with Rice Recipe
- In a pan, cook the beef until browned
- Cook the rice according to package
- Add in remaining ingredients
- Bring to a boil
- Reduce heat and simmer for 35 minutes
- Pour chili over cooked rice
