This chicken chili recipe was passed down from a friend, and now it is one of our favorites! I always make it when I have some left over chicken. Crowd pleaser.

Ingredients
4 Cups Cooked Shredded Chicken Breasts
2 Cans Kidney Beans, Drained
1 1/2 Cups Chicken Broth
4 Jalapeno Chile Peppers, Sliced
1 Can Green Chili Peppers, Chopped
1 Large Onion, Chopped
3 Garlic Cloves, Minced
1 Teaspoons Oregano
1 Teaspoons Fresh Ground Cumin
2 Teaspoons Chili Powder
1/2 Teaspoons Ground Cloves
1/2 Teaspoons Cayenne Pepper
2 Medium Zucchini, Sliced
3 Celery stocks, Sliced
1 Cup Fresh Corn, Drained
1 Teaspoon Olive oil
Directions for Chicken Chili Recipe
- In a large pan, saute the onions and garlic
- Add in remaining ingredients and bring to a boil
- Reduce heat and let simmer for 45 minutes
- Top with cheddar cheese
Chicken Chili Recipe
1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack chees
- In a pan, saute the onion until tender
- Add in the jalapeno, garlic, chili peppers, oregano, cumin, and cayenne
- Stir mixture until tender
- Mix in the chicken broth, white beans, and chicken
- Cook on low heat for about 20 minutes
