I added extra basil & oregano, plus 1 tsp chili powder & pepper to this chili bean soup recipe. Had friends over for the 4th of July and everyone enjoyed it.

Ingredients
1 Large Onion, Chopped
1 Large Green Pepper, Chopped
2 Large Carrots, Sliced
1 Rib Celery, Sliced
1 Corn Cob, Corn Shucked
1 Can Black Beans, Rinsed, Drained
1 Can Pinto Beans, Rinsed, Drained
1/2 Cup Lentils
4 Tomatoes, Crushed, Reserve Juice
1/3 Cup Pineapple Juice
1 3/4 Cups Cold Water
3 Tablespoon Chili Powder
4 Cloves Garlic, Minced
1/2 Teaspoon Ground Cumin
1 Teaspoon Cayenne Pepper
3 Cups Shredded Meat [Chicken, Pork, Beef]
Directions for Chili Bean Soup Recipe
- Combine all the ingredients into a slow cooker
- Mix well and cook on high for 4 hours
- If you decide to use meat, add it to the slow cooker first and put ingredients on top
Chili Bean Soup Recipe
1 medium onion, chopped
3 garlic cloves, minced
3 tablespoons olive or vegetable oil
4 cups vegetable broth
1 (16 ounce) can kidney beans, rinsed and drained
1 (4 ounce) can chopped green chilies
1/4 cup tomato paste
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 1/2 teaspoons brown sugar
1 1/2 teaspoons lime juice
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon ground cumin
- In a pan, saute the onions and garlic until nice and tender
- Add in the remaining ingredients and bring pan to a boil
- Reduce heat and let simmer for 15-20 minutes
